A Fridge That Keeps…

recipeofthemonth:

Lately I have been focusing on using everything in my fridge before I go out and buy more food for new recipes. This saves money not only on groceries but on gas going to the store. Well, I actually live 2 blocks from the grocery store but, I’m not gonna lie, I have driven multiple times (in my defense, I don’t want to carry a weeks worth of food and two kids home in the snow). This has really helped in a sense that I’m not throwing out as much spoiled food that I may not have realized was there. And when any item is getting close to expiration, I always cook it up within a day…or make my husband eat it. Just kidding.

So here are a few tips to keep your refrigerator items

Tips

  1. Take Inventory: This is always a good idea to know what you have and when it expires. I will simply write things down on a little scrap of paper then try and create a meal that uses 2-4 items. The meal doesn’t have to be perfect, it just has to be edible.
  2. Buy Seasonal or On Sale: This might be a no-brainer but it really helps your budget when you are buying items, especially produce, that are in season. For example, Fall pumpkins, squash, and eggplant are all great healthy choices that will keep on your kitchen counter for a long time but you don’t want to try and buy these in the summer.
  3. Stock Up on Frozen Veggies: I have read that frozen and fresh vegetables have about the same nutrition. This article states that when vegetables are in season buy them fresh. If not, go frozen. Always have an assortment of veggies and fruits in your freezer and in the case that you don’t have any fresh produce, it’s very easy to dress up the frozen versions (for example, add sauteed red onion or shallots and chopped mint to frozen peas. Delicious!)
  4. Condiments: I’m not talk Ketchup, but keeping items like grainy or course ground mustard and different types of vinegars are handy when whipping up a quick sauce or dressing.

Foods That Keep

  • Frozen Vegetables: Peas, Broccoli, Edemame, Sugar Snap Peas (for stir-fry)
  • Sweet Potatoes
  • An assortment of regular potatoes (Red, Russet, Yukon Gold)
  • Ginger Root (for stir fry. You can peel and dice it up and keep it in the freezer as well)
