Simple Chicken and Mushrooms in a Garlic White Wine Sauce

When I was in 7th grade I started playing on a club volleyball team with my best friend Kara. The night before tournaments we almost always spent the nights at each other’s house (probably our parent’s trying to get rid of us) and stay up late making farting noises, laughing our heads off. I remember one time her mom coming into the room and very firmly telling us “enough with the noises and it was time to get to bed because we had to wake up very early and drive all the way to Austin.” No worries mom; we were going to get our sleep because we were sleeping in our uniforms. That’s right, to maximize our sleeping hours, Kara and I would sleep in our sport bra, jersey, spandex shorts and even our knee-high socks and knee pads (so everything but our shoes). In the morning we would get up brush our teeth, throw on our shoes and be out the door. My dad would laugh and say, “What, are you saving like 5 minutes?” We would both be like, “Uh YEA!”

If you are ever feeling as lazy as Kara and I, this is the perfect dinner for you to make. I was having one of those nights and this is what was for dinner. It was fantastic! I found the recipe at SkinnyTaste.com and although I didn’t have any parsley, I added some fresh lemon juice and lemon zest. I also skipped the step of flouring the chicken because…I already said I was feeling lazy. My husband said this was one of the best dinners we have had. Give it a try!

  • 8 chicken tenderloins, or 3 breasts pounded thin
  • 2 tsp butter
  • 2 tsp olive oil
  • 1/4 cup all purpose flour
  • 3-4 cloves garlic, minced
